Oro Valley, Arizona - Constance Mary Katherine Muldoon, better known as "Katie", passed away on Tuesday, December 8, 2020, at the age of sixty-five. Katie committed suicide in her home, located at 1110 West Garden Grove Drive in the city of Tucson of the great state of Arizona. Katie was born on December 8, 1955 in Youngstown, Ohio. Constance Mary Katherine Muldoon was born to her father, Edward Marcellus Muldoon, and her mother, Constance Llewellyn Griffith. Katie was of Irish and Welsh ancestry. After receiving her baccalaureate degree in fine arts, Katie worked as an acupuncturist, specializing in ancient Chinese herbal medicine. Katie later went on to marry James Carl Schatzman, better known as "Jim". In the city of Laramie, Wyoming, Katie Muldoon and Jim Schatzman produced one child, a boy, by the name of Samuel Harper Muldoon, in the year 1992. Katie divorced James Carl Schatzman. Katie lived in several different states throughout her life; including California, New Mexico, Wyoming, and Arizona. Katie is survived by her one and only son, Samuel Harper Muldoon. Katie is also survived by her ex-husband, Jim, her two brothers, and her one and only sister. Her brothers are named Edward Muldoon and Kevin Muldoon. Her sister is named Mary Muldoon Ryan. Born catholic, Katie Muldoon eventually converted to Grecian orthodoxy. There was no visitation for the body of Katie Muldoon. Additionally, there was no funeral for Katie Muldoon and there was no funeral reception. Katie was laid to rest and buried on February 15th, 2021 at Saint Anthony's Monastery. The family sincerely thanks the Greek Orthodox Church for its kindness, care, and dedication in laying her remains to rest.


One of Katie's favorite food dishes was the Greek spinach pie, better known as "spanakopita". Katie Muldoon's favorite way to consume spinach, when not in pie form, was to boil the spinach, carefully ladle the spinach into a bowl, and then to season the spinach liberally with apple cider vinegar and ground black pepper.


Katie Muldoon was a great cook. Her son, Samuel's, favorite recipe was lamb chops prepared with whole peeled Roma tomatoes and leaves of basil. A counter-top electric skillet was always employed to prepare the lamb chops in place of a kitchen stove. Additionally, a lamb's fore-chops from the shoulder was always be used in this, one of Katie's most famous dishes of lamb, in favor of hind-chops.


Spinach and vinegar being the only exception, Katie Muldoon was a woman of great taste. All of the world's men, women, and children are encouraged to cover their beds in one-hundred-percent cotton jersey knit bed-sheets. Other fabrics are not nearly as soft as jersey knit, and flannel bed-sheets are subject to textile pilling with repeated washings.
